Bredele are traditionally made for Saint Nicholas’ Day in Alsace. But these small biscuits have conquered the whole of France! To be paired with a Saint-Amour in order to reveal the spiciness of this Beaujolais wine.

Ingredients

  • 75g butter
  • 45g sugar
  • 1 egg yolk
  • 170g flour
  • 2 tsps cinnamon
  • For the icing : 160g icing sugar and 1 egg white

Preparation

  • Step 1Start by whipping the butter and sugar together, until smooth.
  • Step 2Continue mixing and at the same time add the egg yolk, then the flour and cinnamon.
  • Step 3Roll into a ball, cover in clingfilm and place in the fridge for 1 hour.
  • Step 4Preheat the oven to 180°C.
  • Step 5You can divide the dough into two or three balls to make it easier. With a rolling pin, roll out the dough and cut using a biscuit cutter.
  • Step 6Bake in the oven for 5 to 6 minutes, until the edges of the biscuits start to golden.
  • Step 7For the icing, mix together the egg white and icing sugar until smooth.
  • Step 8Pour the icing into a piping bag and decorate the biscuits once they have cooled down.
