Married with a blend of spices and an expressive red wine like a Juliénas, cauliflower becomes a main course that's as comforting as it is delicious.

Ingredients

  • Serves 4
  • 1 cauliflower
  • 2 tbsp honey
  • 4 tbsp olive oil
  • 2 garlic cloves
  • 2 tsp smoked paprika
  • A pinch chili powder

Preparation

  • Step 1Preheat oven to 200°C.
  • Step 2Wash the cauliflower then remove the leaves.
  • Step 3Steam for 7 minutes.
  • Step 4Meanwhile, in a ramequin, mix together the honey, olive oil, garlic cloves, paprika and chilli powder. Season to taste.
  • Step 5Once the cauliflower is steamed, place it on a baking sheet. Coat the cauliflower with the spice mixture using a brush.
  • Step 6Bake in the oven for fifteen or so minutes, stab with a knife to check whether it’s cooked - it should be soft and slightly golden.
  • Step 7Tip: Mix together some natural yoghurt and olive oil. Season. Serve the cauliflower on a bed of yoghurt, add a few pomegranate seeds and fresh herbs.
