Chips and saffron mayonnaise

Why not try this recipe on International Chip Day? These golden chips are impossible to resist, even more so when served with saffron mayonnaise! Paired with a fruity Beaujolais, they will have everyone's mouths watering.

Ingredients

  • Chips :
  • 1kg chipping potatoes (Bintje, Monalisa, Manon...)
  • 3 tbsps vegetable oil
  • 1 tbsp herbes de Provence
  • 3 tbsps flour
  • Sea salt / pepper
  • Saffron mayonnaise :
  • 1 egg yolk
  • 1 tsp mustard
  • 1 tbsp lemon juice
  • A pinch of saffron (around 0.1g)
  • Salt/pepper

Preparation

  • Step 1For the chips : preheat the oven to 230°C.
  • Step 2Wash the potatoes, dry them then cut into chips.
  • Step 3In a bowl, coat the chips with the oil, herbes de Provence and flour.
  • Step 4Place the chips on a baking tray covered with baking paper.
  • Step 5Cook in the oven for 30 minutes and turn over halfway through.
  • Step 6Once they are golden, remove from oven and sprinkle with sea salt and pepper before eating.
  • Step 7For the mayonnaise: in a bowl, mix the egg yolk, mustard, salt and pepper.
  • Step 8Once the mixture is smooth, slowly drizzle in the oil, whisk constantly.
  • Step 9Once your mayonnaise has thickened, add the lemon juice and saffron, stir.
  • Step 10Enjoy your chips and saffron mayonnaise!
