Chips and saffron mayonnaise
Easy Red- Beaujolais
Why not try this recipe on International Chip Day? These golden chips are impossible to resist, even more so when served with saffron mayonnaise! Paired with a fruity Beaujolais, they will have everyone's mouths watering.
Ingredients
- Chips :
- 1kg chipping potatoes (Bintje, Monalisa, Manon...)
- 3 tbsps vegetable oil
- 1 tbsp herbes de Provence
- 3 tbsps flour
- Sea salt / pepper
- Saffron mayonnaise :
- 1 egg yolk
- 1 tsp mustard
- 1 tbsp lemon juice
- A pinch of saffron (around 0.1g)
- Salt/pepper
Preparation
- Step 1For the chips : preheat the oven to 230°C.
- Step 2Wash the potatoes, dry them then cut into chips.
- Step 3In a bowl, coat the chips with the oil, herbes de Provence and flour.
- Step 4Place the chips on a baking tray covered with baking paper.
- Step 5Cook in the oven for 30 minutes and turn over halfway through.
- Step 6Once they are golden, remove from oven and sprinkle with sea salt and pepper before eating.
- Step 7For the mayonnaise: in a bowl, mix the egg yolk, mustard, salt and pepper.
- Step 8Once the mixture is smooth, slowly drizzle in the oil, whisk constantly.
- Step 9Once your mayonnaise has thickened, add the lemon juice and saffron, stir.
- Step 10Enjoy your chips and saffron mayonnaise!
