Halloumi, courgette and tomato kebabs

Summer has arrived, it’s time to get the barbeque out for these vegetarian skewers. The perfect pairing? The Beaujolais Nouveaux you wisely saved for just this occasion!

Ingredients

  • 1 pack of halloum
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 courgette
  • A dozen or so cherry tomatoes
  • 1 red onion
  • 10 wooden skewers

Preparation

  • Step 1Cut the halloumi into cubes.
  • Step 2In a bowl, mix the honey and olive oil, then add the halloumi.
  • Step 3Wash the courgette, then cut into ribbons using a vegetable peeler.
  • Step 4Wash the cherry tomatoes and cut in half.
  • Step 5Chop the onion.
  • Step 6Assemble your kebabs on wooden skewers, alternating the ingredients.
  • Step 7Cook on the barbeque or plancha.
  • Step 8Enjoy!
