You're going to melt for this comforting childhood favourite, Mac'n Cheese! And to accentuate the unctuous texture of this dish, we suggestyou pair it with a Beaujolais Villages white.

Ingredients

  • 3 shallots
  • 50g butter
  • 50g flour
  • 1l milk
  • 200g grated cheddar
  • 100g grated Comté cheese
  • 100g grilled bacon
  • 500g pipe rigate
  • Breadcrumbs
  • Salt & pepper

Preparation

  • Step 1Preheat the grill to 220°C.
  • Step 2Finely chop the shallots.
  • Step 3In a heavy bottomed pan, prepare the cheese bechamel. Melt the butter then add the shallots, sauté for a few minutes.
  • Step 4Add the flour, stir well. Then gradually add the milk while constantly whisking to avoid lumps. Continue to whisk while the mixture thickens.
  • Step 5Lower the heat, add the cheddar and Comté. Season.
  • Step 6Fry the bacon and once it has cooled, cut into pieces.
  • Step 7Cook the pasta in a saucepan of boiling salted water for 2 minutes less than indicated on the packet then drain.
  • Step 8Pour the pasta, bacon and sauce into a gratin dish. Stir until the bechamel covers the pasta and bacon.
  • Step 9Sprinkle with breadcrumbs and cook under the grill for 5 to 6 minutes or until golden.
