The start of the new school year means the arrival of autumn and its comforting dishes. Traditionally a sweet dish, tarte tatin is also delicious in a savoury version.

Ingredients

  • For the pastry :
  • 200g flour
  • 100g softened butter
  • 1 egg
  • A pinch of salt
  • For the filling :
  • 5 red onions
  • 3 tbsp sugar
  • 3 tbsp balsamic vinegar
  • 2 tbsp water
  • 50g feta
  • Olive oil
  • Salt/pepper

Preparation

  • Step 1Preheat oven to 180°C.
  • Step 2Start by peeling the onions and cutting them crosswise into three equal pieces.
  • Step 3Heat a drizzle of olive oil in a frying pan, add the sugar and balsamic vinegar, leave to dissolve for 2 to 3 minutes. Then add the onions and water, season and leave to cook for a further 20 or so minutes on a medium heat.
  • Step 4Meanwhile, prepare the pastry, rub the flour and butter together, until the mixture resembles crumbs.
  • Step 5Add the egg and salt, knead until smooth.
  • Step 6Roll out the pastry with a rolling pin.
  • Step 7Place the onions cut side down in a round oven-proof dish. If there is any left, pour some of the sugar/balsamic/water mixture over the top.
  • Step 8Place the pastry over the onions, making sure to tuck in the edges all around the dish. Prick with a fork.
  • Step 9Bake for 20 to 25 minutes until the pastry is golden.
  • Step 10Once it has cooled down a bit, turn the tarte tatin out onto a plate and sprinkle with feta.
  • Step 11Serve immediately!
